  1. 1 ½ cups pumpkin puree
  2. 1 ¼ cups evaporated milk
  3. 1 egg
  4. 1 tsp each cinnamon, ginger, nutmeg
  5. ¾ cup brown sugar
  6. Pinch salt
  7. 1 Tbsp flour
  1. Mix all ingredients well and pour into an unbaked pie shell. Bake in the bottom third or a preheated 400 oven for 10 minutes, then turn down to 350 and bake about 45 minutes until set in the middle. Bake first thing in the morning and chill before serving.
  2. To prepare the pumpkins: ‘Cut in half, gut, and save seeds to plant or eat. Place on a foil covered baking sheet, cut side down. Bake at 350 for as long as it takes to soften. Scrape pulp or just peel off the outer skin. Pulse pulp in the food processor a few times to prevent stringiness. You’ll have extra, so measure out portions needed for your favorite recipe, and freeze in separate containers.”
