Braised Collard Greens with Sweet and Sour Sauce

Ingredients
  1. ¼ cup water
  2. ¼ cup sweet sherry
  3. 3 Tbsp soy sauce
  4. 2 tsp sugar
  5. ½ tsp Chinese 5-spice powder (usually a mixture of fennel, cinnamon, cloves, star anise, and Szechwan peppercorns)
  6. 2 ½ lbs collards greens, stems removed and discarded, sliced crosswise
  7. Rice Vinegar
Instructions
  1. 1.Bring the water, sherry, soy sauce, sugar, and 5-spice powder to a boil in a large, heavy pot.
  2. 2.Add the collard greens; cover. Reduce to a simmer and cook until very tender, 15-20 minutes. Add more water if necessary to keep mixture from drying out.
  3. 3.Uncover the pot and continue simmering until the mixture no longer resembles soup. Remove the pot from the heat.
  4. 4.Stir in a dash of rice vinegar. Season to taste with more sugar, soy sauce, or rice vinegar.
