Beet Soup

  1. 4 large beets
  2. 1 large potato
  3. Other veggies celery, kale, arugula, etc
  4. 1 large onion
  5. Salt and pepper to taste
  6. Plain yogurt
  1. Wash all the veggies and cut into chunks.
  2. Place in a large steamer over boiling water, steam until very soft.
  3. Using the water from the steamer, and any other stock or water as needed, blend the cooked veggies until very smooth and thick.
  4. Return to pot; heat gently to avoid sticking.
  5. Add salt and pepper.
  6. Serve each bowl with a generous portion of yogurt in center of soup.
